Jalapeno Cayenne Cheddar Cheese and Chicken Quesadillas

In a hurry for a quick and tasty meal? Try these spicy cheddar cheese and chicken quesadillas with just enough kick of jalapeno and cayenne pepper. They are this busy mom's go to lunch!

My husband has long been buying this jalapeno cayenne cheddar cheese at our local grocery store, Wegmans. For those of you who aren't lucky enough to have one nearby...I am sincerely sorry. I could not live without my Wegmans! It is hands down the best. They have so many great products and are always working to make life easier for busy families. (Oh and this post is not sponsored by Wegmans in any way. I just really love that store.) Anyways...I digress.

So, like I was saying, he has this very spicy cheese that I had been hesitant to try. (Shh...I am a pretty picky eater). One day I took the plunge and had it on a grilled chicken sandwich, and I fell in love.

This cheese is the best. If you like spicy anyways.

Even if you don't live near a Wegmans, perhaps your local grocery store carries a similar cheese. We get it cut by the pound from the deli so it comes in slices and makes this meal fast since there is no cheese to shred.

As a busy mom with two kids under three, I sometimes neglect making a decent lunch for myself. I am too busy running after my kids and getting them their decent lunches.

Last week, I decided to try this cheese with some left over shredded chicken that I had on hand. I like to cook a few pieces of chicken in the crock pot to use in recipes throughout the week. That too makes life easier!
I layered the chicken between the cheese and threw in some green onions. You could saute the onions first if you wanted, but for this time around I chose to just include them raw.

As I have mentioned previously, I love cooking with cast iron. I used to have an actual quesadilla maker similar to this one: Hamilton Beach QUESADILLA MAKER9.5 NONSTICK GRIDS EASY CLEAN (*affiliate link), but once I tried making one in the skillet I never went back. They get so crispy and delicious when cooked in just a little bit of olive oil.

If you have picky eaters like I do (I have no idea where they get that from...hmm), you can throw a plain Jane quesadilla on the other side of the pan. I just put in some white cheddar cheese and shredded chicken for them. My daughter likes things kept pretty simple.
I cooked them until browned on both sides (and I really like when some of the cheese spills out and gets crispy around the edges. It's the best!)
Once they were done, I cut them with a pizza cutter. Probably start to finish, it took less than 15 minutes which is perfect for me. I need to keep moving. Too much to do!

Plus, I am lucky if I even get to sit down to eat before my kids are ready to get down causing havoc and destruction. (Okay, they really aren't that bad...but I have left the room for a few minutes to come back and find drawings on every single wall in the living room.)
So what do you think? Can you stand the heat? I have made this since with a combination of both the spicy cheese and white cheddar, and it was definitely not as hot on the tongue but still delicious. JalapeƱo Cayenne Cheddar Cheese and Chicken Quesadillas
Flour tortillas
Jalapeno Cayenne Cheddar Cheese (for locals, you can find this at Wegmans)
Cooked, shredded chicken
Green onions
Olive oil

Heat cast iron skillet on medium-high heat with approx. 2 tablespoons of olive oil. Place tortilla in skillet and add cheese slices, prepared chicken and onions on one side. Fold the other side on top and cook for a few minutes until browned. Flip and cook until browned. Allow to cool, cut with a pizza cutter and enjoy!
