Easy Buffalo Chicken Wing Pizza with Blue Cheese {with kid friendly version}

One of our family's favorite splurges is chicken wing pizza. We love it, but it can be quite a bit pricier than regular old pepperoni, so today, I am sharing a quick and delicious "make at home" version that is easier on the budget without losing any of the flavor.
The ingredients in this recipe include cooked chicken, Ken's Steak House Chunky Blue Cheese Dressing, crumbled blue cheese, shredded mozzarella and the Original Anchor Bar Buffalo Wing Sauce.

Since we live in Rochester, NY (neighbor to Buffalo, NY), we have grown up on chicken wings and when making our own "Buffalo style," we have to go with the original source of the sauce: Anchor Bar's. If you don't know the story of how chicken wings came to be you can read that right here.

The first time that I made this, it was a week night meal, and my family was already hungry, so I started with a pre-made pizza crust. Easy step number one! I had prepared a couple of pieces of chicken in the slow cooker earlier in the day. Once that was done, I cut it into small chunks to use for the pizza. Easy step number two! 
As noted in the title of this post, I have a "kid friendly" version that I will intersperse throughout this post, since we made it all on the same crust. The sauce we used for this, is way too spicy for our little ones, so I separated out several pieces of chicken just for their "section."
To prepare the crust (again, we just bought a ready made one), I spread a little olive oil on it and then the blue cheese dressing.
I put enough dressing on the crust to spread around in a semi-thick layer. Use more or less according to your preference, but this step really makes this pizza taste extra delicious.
Next, I put our cut up chicken chunks in a small bowl and smothered them in Anchor Bar Buffalo Wing Sauce. We used "Medium" for this pizza, but "Mild" is a great option if you don't like it super spicy. Or go with an even spicier version if you can stand it!
The kids' chicken chunks were simply smothered with more Ken's Steak House Blue Cheese Dressing.
I portioned a small section of the crust for the kids (they don't eat much being only 2 and 3, so it wasn't very big).
Now, for the toppings! Which would be cheese and more cheese. Not the best if you are watching your weight, I know, but oh so good.
I covered it in mozzarella cheese first making note of where the section for the kids was.
And then sprinkled on that delicious crumbled blue cheese. Some children may not like this, since it such a strong cheese, but both of mine love it. They would eat it straight out of the container if I let them.
I really didn't measure any ingredients as I whipped this pizza up. I just "winged" it :) (Sorry...I had to).

On the side for my husband and I myself, I drizzled more Anchor Bar sauce on top (at his request).
And into the oven it went according the time and temp on the pizza crust packaging. I used a pizza sheet, but you could use a stone, or possibly straight on the rack, depending on your crust.
The cheese didn't melt the best near the extra sprinkled wing sauce, but it didn't matter, because it tasted de-li-cious!
I carefully cut both Hazel and Owen's pieces first, making sure not to get any sauce on their portions. It wasn't hard to tell once I cut into it, thankfully. And they devoured it! I guess you could call theirs, "Blue Cheese Chicken Pizza."
My husband and I, of course, devoured our side as well. With football season upon us, I know we will be making this a lot. I am glad it is so easy and tastes so good. And, we get to save money by making it at home!

(Just a note: all measurements are approximate. Use whatever amounts work for you and your family )
-Ready made pizza crust (or your own favorite homemade version)
-1 1/2 cups precooked chicken chunks (I prepared mine in the Crockpot)
-Wing Sauce (we used Anchor Bar Buffalo Wing Sauce - Medium, but Mild is great for this too!)
-Blue cheese salad dressing (enough to smooth onto pizza crust)
-1 1/2 - 2 cups mozzarella cheese
-1/2 - 2/3 cup crumbled blue cheese

1. Prepare chicken ahead of time either in a slow cooker or a pan. Cut into chunks and place in a small bowl.
2. Add wing sauce to chicken and stir until covered (if making this for kids, without wing sauce, coat the chicken in blue cheese dressing)
3. Smooth blue cheese dressing over crust in a thick layer. 
4. Spread chicken chunks evenly on crust (make a small section for the kids, if you need to, avoiding getting sauce on it)
5. Sprinkle entire pizza with shredded mozzarella and then crumbled blue cheese on top.
6. Place in the oven, and cook according to crust recommendations or when cheese is melted if not long enough.
7. Enjoy!
